The Institute of Food Science and Technology of Fujian Academy of Agricultural Sciences (FAAS) was founded in 1980. The institute currently has five research laboratories: the Fruit and Vegetable Processing and Food Fermentation Laboratory, the Edible Mushroom Processing and Functional Food Laboratory, the Plant-Based Active Substances and Nutritional Science Laboratory, the Aquatic and Livestock Processing Laboratory, and the Agricultural Environmental Protection Laboratory. It is supported by nine research teams, including the Food Microbial Selection and Application Innovation Team, the Fruit and Vegetable Bio-processing Technology Innovation Team, the Edible Mushroom Processing Technology Innovation Team, and the Agricultural Environment Protection Team.
The institute focuses on basic and applied research in various fields such as the fermentation of fruits, vegetables, edible mushrooms, foodstuffs, grain, oil, and aquatic products. It also conducts research on the collection and utilization of microbial germplasm resources, functional foods, bioactive substances, the development of new products, comprehensive utilization of agricultural by-products, and agricultural environmental engineering. Additionally, it provides consultant training and technology promotion services for agricultural product processing applications and technology transformation. The institute currently employs 50 people.
It is home to several important platforms, including the Subtropical Characteristics of Fruit and Vegetable Mushroom Processing Key Laboratories of MARA, the National Edible Fungus Processing Technology R&D Sub-center, the Agricultural Products (Food) Processing Key Laboratories of Fujian Province, and the Food Biofermentation Technology Engineering Research Center of Fujian Province. Additionally, it operates an Industry-University-Research Cooperation Demonstration Base and serves as a teaching and research training base for Fujian Agriculture and Forestry University, Fuzhou University, Fujian Agricultural Vocational and Technical College, and the Fujian Provincial Wine Culture Association.
