This case study highlights how a local bakery in southern Germany collaborates with farmers and scientists to revive Swabian Squarehead Wheat, an endangered traditional crop. Through a regional value chain, the bakery produces “Dickköpfle” bread, preserving biodiversity, supporting 600 jobs, and strengthening local identity. Despite challenges like crop failures, the project promotes sustainability and innovation, including new products using ancient grain varieties, while fostering regional pride and ecological awareness.
